Jazu is a Hi-Fi Cocktail bar that offers serious drinks and music, with a host of top-class food pop-ups and kitchen residencies. February sees a month-long residency by GrillBird, serving a menu of yakitori & small plates, chef Ben Smith (previously at Quality Chop House) adopts a no-waste ethos, using every part of the bird (sourced from Fosse Meadows Farm). There's Homemade Shokupan - a light and fluffy Japanese milk bread - served with Miso Butter; crunchy-coated Karaage chicken with hot maple syrup; and a menu of yakitori skewers. For something sweet, there's Mitarashi Dango, a traditional Japanese rice dumplings licked with a sweet soy glaze, served w/ black sesame whipped cream.Next up is Chef Dan Chambers (Head Chef at Bambi. Brunswick House, 10 Greek St) with a New-Wave French Bistro menu that blends classic French techniques with global influences, reinventing the traditional bistro with a fresh, modern approach. Dan is in the kitchen for three weeks, 5 - 22 March.
