Entre el queso se destaca el Gorgonzola Tosi, producido en la ciudad de Gattico (100 litros de leche para hacer 12 kg de Gorgonzola). Macellaio Roberto Costa cree firmemente que para interpretar mejor ésta profesión, nunca debe comprometerse a ciertos parámetros, la calidad debe estar por encima de todo.
