Riccardo comenzó su carrera muy joven en el prestigioso "GIRARROSTO" de Milán, propiedad de su familia. En 1982 se trasladó a Estados Unidos y abrió el famoso Sonny Bono's en Los Ángeles. En 1987 comenzó a trabajar con su primo, Roberto Ruggeri (propietario del Bice's Venture), con quien abrió el Bice New York, el de Los Ángeles y muchos otros en todo el mundo. Ahora, tras tres años como chef del Bice de Chicago y junto con su mujer y subchef Veronica y su prima y jefa de sala Barbara, ha decidido seguir dando rienda suelta a su creatividad gastronómica con el restaurante que lleva su nombre: "Riccardo Trattoria".
