Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. I had lunch with a friend on Saturday around 2 PM, which was a great time as the lunch rush had ended. The service was excellent, and the food was delicious—definitely comfort food at its best. My friend ordered the Reuben sandwich, and I went with the turkey grilled cheese. Both dishes were fantastic and made with high-quality ingredients. Overall, we had a very pleasant experience and I would definitely recommend this place.

For the PNW area this is a pretty good BBQ joint. I am from North Carolina and had a Dallas person on our table and we both agreed the food was pretty good and the real thing. Service was a bit spotty. Our server was nice, but they were not appropriately staffed on a Wednesday. If you are looking for good BBQ at good prices, this is a good place to visit.

The food was delicious!!! I had the Lemon shrimp Gnocchi, my grandson had a small pizza and my guy had a Italian Grinder and he said it was delicious... The pizza was delicious as well... And our server and other waitstaff were awesome!!! We will come again and again... Oh and we had Garlic knots and they were delicious also!!😋😋😋
