Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Food wasn’t very good. Shrimp was over cooked and so was the steak. Service was decent but the server had zero personality and didn’t seem to want to engage any more than absolutely necessary. Drinks were ok. I probably won’t go back given the high prices and poor food.

For the PNW area this is a pretty good BBQ joint. I am from North Carolina and had a Dallas person on our table and we both agreed the food was pretty good and the real thing. Service was a bit spotty. Our server was nice, but they were not appropriately staffed on a Wednesday. If you are looking for good BBQ at good prices, this is a good place to visit.

Overall, a great experience. Strange that the front door was left open the entire night on a very chilly evening. There was some of problem with the lock where (-according to the hostess) the door had to be fully open or closed and several patrons complained about it being open. The power went off at some point because of the bomb cyclone, but the team handled it very well. Would definitely return.

The salmon risotto dish was outstanding. We also tried the lemon butter cake for dessert and will definitely order it again. Mark Dufresne and the musicians were amazing. We love the new schedule for music.
