Inspired by Melbourne's vibrant laneway dining and street art culture, the restaurant features a beautiful bar, Japanese-inspired lamps, chandeliers, and a striking graffiti wall depicting a fishing village in Hokkaido.

Kushiro's menu combines traditional Japanese techniques with contemporary flavors, offering standout dishes like Scampi Tartare, Cured Salmon, Chef Po’s Char Siu, Slow Roasted Short Rib, Confit Duck, and Tofu Panna Cotta. Patrons can also enjoy Kushiro's exclusive brand of sake, crafted in Japan.

Everything was outstanding… food, drinks, service. We had the Omakese Menu - Absolutely fantastic. An amazing experience from start to finish.

Had a great time.... Good food made from fresh ingredients and will return. Had the Omakase Banquet for 2.... Scampi Tartare - Fresh and sweet taste of seafood accentuated by the lobster paste. Good signature dish for starter. Tuna Tataki - tender and moist. Kimoji - Fusion between Japanese and Chinese Sichuan dish. Spicy, crunchy and moist fried chicken pieces. Great dish. Toothfish - Fried toothfish fillet. It was moist and fresh. I did question why have 2 deep fried dishes one after another. Wasted the quality of the toothfish fillet. The chilli sauce was underwhelming. The Maître d' (Karl) has taken the feedback on board. I think a pan-fried fish dish will be much better addition to this menu. Lamb Chops - Tender and slow cooked. My partner love this dish. Deserts Panna Cotta Tofu - visually catchy and I feel is a good fusion desert (Japanese/Chinese/Italian) Imperial Seal - Great for a picture.... The ice-cream was well made. I finished off with a Affogato - good. For a Tuesday, 90% full. Which I feel was a good turnout. Relatively quiet and can have a personal conversation with your partner. The high ceiling helps. The deco is right for a premium restaurant with food which matches it. I didn't get a chance to taste the bartender skills. I understand he will be representing Australia in this year's bar cocktail event... Good luck... Will taste next time.... Keep up the good work Karl and team Kushiro Fusion.

I had a truly delightful evening out with friends at Kushiro. From the moment we stepped inside, we were greeted by a warm and inviting atmosphere, enhanced by elegant decor that perfectly sets the tone for a memorable dining experience. The staff were not only attentive but genuinely friendly, going above and beyond to accommodate our friend with allergies. They took the time to offer thoughtful suggestions and ensured that our dining choices were safe and enjoyable, which we greatly appreciated. Now, let’s talk about the food—it was simply superb! Each dish was not only delicious but also beautifully presented, showcasing the chef's artistry. From the appetizers to the desserts, every bite was a treat, bursting with flavour and creativity. Thank you to the entire team for making our night so special. We can’t wait to come back!
