Del equipo editorial de OpenTable: El L.A. Times una vez llamó a Peter Merriman “la Alice Waters aloha” debido a su larga reputación como defensor del uso de ingredientes locales. En Merriman's, que abrió por primera vez en la Isla Grande en 1988, eso se traduce en reversiones de platos hawaianos tradicionales, como el mahi mahi mahi con costras de macadamia y el falafel de taro. En 2018, el grupo abrió locales de vanguardia en cuatro islas y el último de Honolulu se destaca por sus estampados selváticos y sus llamativos suelos verdes y blancos.

All of Peter Merriman's restaurants share a common mission statement: Do the Right Thing! Every member of the staff is taught to respect the `aina (land) that feeds and the people who produce the food, to be proud in their work, and to take responsibility for making sure every customer has a memorable dining experience.
