Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain. The space still feels like The Saloon, but carried into the present day. Enjoy a resurrected Colorado Saloon and feel the history all around you.

What a great experience. Our waiter, Colin, was so helpful with local tips and recommendations. The atmosphere is A+. The food is so flavorful and some unusual combinations that worked great. It is a bit expensive. The bison enchiladas were amazing. Must see this place!

Can't say enough about how great of a time we had at The Saloon! The food was fantastic, the margaritas are every bit as good as I heard they were and the service was excellent. Plus, it has such a cool vibe. The hostess, Mary, truly made our night with all of her tips for visiting the area. We will definitely be back!

What a lovely surprise this place is! Excellent hearty southwestern food and a great ambiance. The drinks are also excellent. I spent 2 weeks in vail and a week in beaver creek, this restaurant and the surrounding town is an easy drive and well worth it! It’s full of locals for a reason. A must try!

this was our second visit this summer to the refreshed Minturn Salon. The patio is great and very enjoyable. Out server did a decent job and our order arrived promptly. I had the Chicken Fajitas which were just ok. the portion size is good but the sides of lettuce, tomato. sour cheese and chess is on the stingy side.... especially the cheese was lacking. The sizzling platter of chicken and veggie was pretty good, a bit on the spicy side but nothing too outrageous.....it was heavy on the oily side which could be improved. My wife had the Fish tacos and enjoyed them very much. The cornbread side is very good.

ate at the old saloon close to 30 years and it was a favorite- the redo killed the ambience/ the menu was so limited with negligible choices/ they discarded classical favorites eg duck , ribs , quail they chintzed on chips and salsa and jacked up prices!!! no plan to return - disappointed

One of the most authentic restaurants you will find in the Eagle Vail area. Excellent service, incredible food, fantastic margaritas and great live music.
