FEATURING PIEMONTE: From snow-capped mountains to volcanic islands and sun-drenched beaches. This northern region offers slow-cooked meats, truffles, creamy cheeses, and Barolo wine. Menu: Appetizer: A refreshing salad featuring slightly bitter radicchio, beautifully balanced by the sweetness and tanginess of pickled pears Secondi: Tajarin, the thinnest and richest hand-cut egg pasta, tossed with a rich and flavourful braised sausage ragu Entree: Braised short rib, incredibly tender, served with delicately sautéed seasonal greens
