PAOLO'S is a charmingly buzzy 50-seat scratch-kitchen and bar with a core menu of refreshed Italian-American, Mediterranean, and seasonal New England recipes reflecting Boston-based chef Paul Delios’ 40-year career.

At his former national award-winning restaurants (Paolo's, Meze and Kane's Donuts) Delios earned acclaim for his mountain-size heart and multi-cuisine mastery. His signature pizza crust, pasta combos and sumptuous entrées have always shined bright.

Named by Boston Common Magazine in 2024 as one of Boston's best restaurants in the suburbs, with dinner and bar service Tuesday through Saturday, PAOLO'S is the first concept by boutique restaurant group Veloce Brands, LLC, founded by Delios and 25-year food and lifestyle writer, editor and communications director Jen Chase-Corwin (owner/creative director).

Sorry to say that a member of our group got a hair on top of her chicken parm. She took it off because it happens sometimes. The dish was delicious. She took half home because portion was large! When heating it up to eat it, she found another hair! Had to throw it out at that point. Everything else we had was very good.

This was our first time here. I would definitely go back. The food was delicious! The restaurant was a cute little quaint place in a strip mall. The minute you walked in you knew it was going to be a good meal. The tables were full and people were enjoying themselves. My husband had the Nonno which was meatballs and sausage and pasta. He said it was very tasty and pasta was definitely homemade. I had scallop risotto which it too was very good. The scallops were a good size and the risotto was very filling. We definitely will go back

I got the meatball appetizer they were the best I’ve had in a long time and I’m really fussy my daughter got the Steak and cheese said it was delicious and the bread with olive oil and nice piece of butter was delicious 2 different kinds focaccia and Italian you won’t leave hungry our server Maryann was excellent also

Our favorite go to spot. Service is great and friendly. Food is always piping hot and delicious. The owner is always present and they take pride in all that they do.

We first tried Paolo's after seeing a rave review in the Boston Globe. As recent New England transplants from Brooklyn, NY, we were looking for that sort of neighborhood Italian restaurant that could become our go-to place after having two of them back in Park Slope. Paolo's is that place. The food is terrific--Chef Paul certainly knows his stuff. The ambiance has a warm, yet sophisticated vibe that actually seems a bit out of character for a strip mall in Saugus! We went on a Tuesday night to celebrate our anniversary--and when we walked in at 7 pm, we had the entire restaurant to ourselves. What?! Where was everyone? Paul told us that they were doing a brisk take-out business that night, but really, no one goes out to dinner on a Tuesday? It's not like it's crazy expensive, or has tiny portions, so I guess it's the location. If Paolo's were in downtown Salem, for instance, there would be a line out the door (especially during October). But short of heading to the North End, or going to a place with a more corporate feel like Davio's at the Lynnfield Marketplace, Paolo's will continue to be our go-to Italian restaurant. We look forward to going back.
