James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

The food was outstanding! It did take a good couple minutes to receive our food though, but we were checked on frequently with amazing service! The food was well worth the wait! Desert was amazing. Will definitely be coming again. I recommend!

I came in for my reservation at 7:15 and I was seated fairly quickly. Unfortunately, I did not receive my drink for nearly 35-45 minutes nor my appetizers. I ordered the steak for about $64 and unfortunately the portion was small but was delicious which left it feeling a bit underwhelming but it was beautifully plated. I’d say if you go you may be very close to another table so it’s a bit less personal and you may leave slightly hungry. $250 tab but I’m not sure the meal was fitting for the experience.

Quiet disappointing after reading some positive reviews. Service was extremely slow; it took forever to receive drinks from the bar. I ordered a Black Russian from the drink menu and was told the bar was missing two of the ingredients. I then ordered a Moscow Mule and received it in a regular whiskey glass. We ordered appetizers, baby scallops and baby scallops with Kobe beef, the portions were unbelievably small and barely warm. We ordered dinner, Sea bass and the Chef's special oven roasted steak. We waited forever it seemed for dinner and again the portions were unbelievably small. The steak consisted of about five quarter size steak medallions and two of those had a considerable amount of fat. I use to be the president of a dinner club and have dined all over OKC for the past twenty years and I must say this was the most disappointing $240 dining experience I've ever encounter. We departed thinking we might need to stop by a fast food restaurant.

WOOOOOWWWWAAA!! I was absolutely amazed there was something this classy in OKC. Absolutely like fine dining in California. Absolutely perfect experience eating. We had the caviar, ceviche, & F5 to start and all were incredible. The mocktail menu was wonderful. Then had the scallops, venison, and wagu steak entrees which were all mind blowing and unique. Polished off with the flowerless chocolate cake. Unbelievable and worth every penny. Will absolutely return!

Kaiya was awesome to work with arranging our dining experience celebrating our mother’s 93rd birthday. I look forward to working with her and Chef Black on another reservation in the future. Food was fabulous by the way!

The atmosphere was wonderful and so beautiful! The food was good but not spectacular. I thought I had booked tea service but either I made a mistake or they did. It all turned out okay and we had a lovely time but a bit of a let down. This is the second time I’ve tried to book a tea there and either no one answers the phone or it’s confusing and hard to book online. This does have the potential to be a darling place to dine. I will be patient and wait! Service was great!

For the price, I expected more effort. And more Christmas decor. Every food was delicious but I would have liked more and there were no sandwiches or scones? Just toasts and desserts. And only three tea options. Just oddly sparse. But tasty. But not $90 per person tasty. The Santa and Mrs. Claus were cute though. And waitress, Heaven, was a delight.

Wowzer!! Really no words to describe how utterly delicious each and every dish was...absolutely SUPERB! Just blown away by the quality and micro precision to every detail. Perle Mesta puts the art in culinary, while keeping it approachable! This will be our go-to for 5star nice occasions. Service was equally outstanding, and the beauty of the space is remarkable. My only constructive criticism would be for the bar staff to be aware of how noisy they are (filling ice bins, moving glasses, talking, etc). This space is small, and with tile floors (check them out, beautifully original and artistic) sounds really travel throughout the restaurant. My only wish was the lights were dimmer, and the experience more intimate (between me and my wife vs me and any patron or staff within 75 feet of me). As to value, its hard to give five stars for $100 per person (pre-tip, with one drink, one glass wine), but believe me, you get what you pay for...thus the BEST $250 you will spend on an ultra-fine dining experience. We will go back!

First time here, party of 3. Server was super accommodating and kindly split a salad and main in the kitchen. Food was very good, main reason for not rating higher was hard pears (inedible) in the burrata salad, burratta was very cold relative to all other items which was odd. Sauces were overly salted in all of our opinions....Still super delicious and top quartile of OKC for sure. Proud Chef Black is here...
