James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

Perle Mesta is where you go when you want to feel fancy fancy. The experience was absolutely top tier, and Chef Black? That man thinks of EVERYTHING. From the perfectly plated dishes to the surprise anniversary letter, I half-expected him to show up and personally sing “Happy Anniversary” to us. The food wasn’t just delicious; it was so beautiful I had to pause and ask myself if I was cool enough to eat it. Spoiler: I’m not, but I did anyway. Now, this isn’t your “let’s grab dinner because we forgot to thaw the chicken” kind of spot—this is where you go to celebrate life’s BIG wins. Worth every penny. Chef Black, you’ve officially set the bar so high, my regular Tuesday night tacos are offended.

It was an awesome restaurant. We enjoyed thanksgiving dinner there. Turkey was very tasty and our server, Landon, provided a great service. We loved whole vibes of the restaurant and the hotel.

Where do I start! It was a cool & brisk Thanksgiving night. But not just any Thanksgiving- it was my wedding day! We celebrated our marriage by having dinner at this fine restaurant! Jason- Jason WAS PHENOMENAL! I can write a book on his service & warmth! He even set it up for us to meet the CHEF!! It was an honor to meet the CHEF! thank you both soooo much for ending my night with such beautiful blessings and honors!! This will forever be in our hearts

Service was very slow. Our salad came long after we were seated and placed our order. We then had a 45 minute wait between the salad and entree course, having to ask about the status of our order. Our entree finally came an hour and a half after our reserved time.

James Beard award chef restaurant didn’t meet up to the standards. This is just a perception to get foodies to try the restaurant. Here are the positives and negatives. Positives :1. Very accommodating to modify my reservation 2. Decent price point but not with the value Negatives: .1hotel vibe restaurant- nothing special ( this is not owned by Hilton ) 2. Took 2 hours for main entree to be served ( reservation 830) had oysters and ordered fish with ink pasta ( VERY salty ) 3. We were still hungry and had Taco Bell on the way home if this tells you anything . Don’t try!!!

I recently dined at Perle Mesta and, while the experience had its moments, overall, it fell short of expectations. The standout of the evening was the butter beans—cooked to perfection and bursting with flavor. However, the rest of the food was underwhelming. While not terrible, most dishes lacked the spark that would make me want to return. To make matters worse, the food was cold by the time it reached our table, which significantly impacted the experience. The timing was a major issue. We were seated promptly at 6:30, but the food didn’t arrive until 9:45-an over three-hour wait that felt endless. It was especially frustrating as we were only checked on three times throughout the entire evening, leaving us feeling forgotten. While the ambiance was pleasant and the butter beans memorable, the service and overall execution need serious improvement. Until these issues are addressed, I would hesitate to recommend Perle Mesta for a satisfying dining experience

SUPERB! Excellent presentations. The Taster F5 Kobe beef, bay scallops, the Radicchio Ceaser Salad and an Entree of Citrus Fennel dusted scallops were savory, aromatic, delightfully sensual. Absolute attention to detail. Looking forward to exploring Perle Mesta again soon!

The service was exceptional. Jason our server was very friendly and accommodating. The tea was wonderful. It's a French style tea rather than English. We will definitely return! Absolutely delightful.
