Del equipo editorial de OpenTable: After years of fine dining on the Strip, James Beard semifinalist Brian Howard took the party to Chinatown, and opened his own restaurant Sparrow + Wolf in 2017. A globally inspired menu of wood-fired cooking includes dishes like fresh-baked sourdough, hand-rolled pasta, and innovate plates of seafood. With a dramatic black-and-gold space, a monster mural of a wolf, and late night entertainers, it’s just the right amount of Vegas.

James Beard–nominated Chef Brian Howard welcomes Chef David Castro Hussong of Fauna (No. 17 on Latin America’s 50 Best Restaurants) for a one-night-only collaboration, where the bold traditions of Mexico blur seamlessly with the layered intensity of Southeast Asia. This immersive four-course dinner unfolds over a dozen distinct dishes — a vibrant culinary dialogue expressed through both individual and communal plates. The evening begins with four plated snacks, two from each chef. Expect dry-aged bluefin tuna with foie gras and salsa macha, Brentwood corn masa takoyaki with bay squid and Oaxacan cheese, and a tomato-laced ostión aguachile that smacks of the sea. The story deepens with dishes like pork confit jungle curry empanadas with tomatillo, octopus al pastor with pineapple nuoc cham and heirloom corn roti, and golden tilefish pibil with fava bean salsa verde, epazote, and palo santo. From the hearth, guests will experience wood-fired Lion’s Mane mushrooms in corn silk dashi and short rib with shiitake noodles and deeply roasted umami.     En general esta bien el restaurant pero el servicio dejo de que hablar. Les pedimos que nos cambiaran a la mesa de enseguida, la cual estaba desocupada y era mas amplia y el mesero dijo que tenia que preguntarle a la hostess y a los minutos volvio diciendonos que dijo la hostess que no. Eso nos molesto mucho porque no les costaba nada. En cuanto a la comida, esta excelentemente bien presentada pero de los 6 platillos diferentes solo 1 platillo fue extraordinario, los demas les falto sabor.

    Pre-movie dinner at the bar. New to Me Marinated Heirloom Tomatoes ($23): One of the specials of the evening. Star component tomatoes at the perfect toothsome texture, with the shellfish at firm bite, and each had absorbed the ideal level of the acerbic marinade. The few crunchy crisps in the bowl were in the experimental stage, being rather too thick for my jaw. Brij Wines 2023 Assyrtiko Lodi ($16 x2 gls): Promoted by sommelier Ruby as the pairing for the tomato dish. Understated creaminess went well with the pork too. Great pour and great tasting. Cute memorable label. Repeats Copenhagen Sparkling Tea LYSEGRØN Green Label ($16 gls; comped): Non-alcoholic, perfect light fizzy perky drink for summer. Black Pepper Honey Pork Flank ($39): Fantastic preparation and presentation by chef Donnie, incredibly delicious tender meat with pings of heat and crunch from the toppings. Honey Toast ($15): My favorite iteration of this dessert. Never on Thyme ($16 x2): A cooling finish to dinner before returning to the blast furnace that is Vegas' prelude to a hellish summer. Value: Wonderful for the high quality consistency and frequent introductions to new rich flavors. Service: Super and friendly from Camille and Amy.

    Excellent food and service. They should be a Michelin restaurant. I did my research comparing restaurants on the strip including high end ones. I’m glad I chose Sparrow + Wolf. I’ve recommended to family and friends already. I am definitely coming back here.

    I love this restaurant and try to visit every time I'm in town. The food is inventive without being precious, if that makes sense; it tastes great and is hearty. I only did 4 stars this time because one of the dishes - the oysters rhubarb with strawberry something - was really a let down. It was raw oysters on the half shell but came out feeling like room temperature and not cold at all. My first and last time eating lukewarm oysters. And there were pieces of shell in all 3 of mine (we split a half dozen between the 2 of us). We also did the grilled oysters and those were definitely at the high standard I'm used to from this place; we both thought we would prefer the raw but ended up much preferring this preparation. Everything else - duck rolls, clams, pork, drinks etc etc was also stellar.
