This intimate event offers a rare opportunity to meet Pierre-Vincent Girardin, who will be traveling from Paris, and experience his exceptional Burgundy wines, paired with a carefully curated sushi menu by our main counter's chefs. This exclusive lunch celebrates the harmony between fine Burgundy wines and Japanese cuisine, reflecting Sushi Yūgen’s commitment to collaborating with talented producers who share our passion for exceptional culinary experiences. Pierre-Vincent Girardin, is the 13th generation of his family to make wine in Burgundy. He grew up learning in the cellar of his father, Vincent Girardin, from a very young age. When the elder Girardin sold his domaine in 2011, he made sure to keep 4.5 hectares of his best sites to one day pass on to his son. In 2017, at the age of 21, Pierre-Vincent made his first vintage and announced himself as a rising talent in Burgundy. His father’s extensive contacts in Burgundy allowed Pierre-Vincent to supplement his domaine vineyards through long-term contracts with top growers who hold his meticulous viticultural philosophy. Rooted in a deep respect for tradition while embracing a forward-thinking approach, PVG crafts wines that are pure, precise, and deeply expressive of their terroir. With meticulous attention to organic and biodynamic practices, PVG’s wines have garnered a devoted following for their elegance, balance, and ability to capture the essence of their vineyard sites. Our omakase menu is based on the traditional Japanese dining style in which we defer to the chef to curate seasonal specialities.
