In August 2024, owner-chef Yusuke Irie brought his expertise as a fresh fish wholesaler to life with UO NIGIRI—an authentic sushi experience like no other.

We source seasonal fish from Toyosu Market, New Zealand, and both U.S. coasts, carefully selected by a professional with years of industry knowledge. While many sushi spots use pre-cut tuna, we take it a step further—only whole, wild Bluefin Tuna makes the cut, ensuring the freshest sushi possible.

All fish are expertly prepared in-house, offering the highest quality and rare varieties you won't often find in the U.S.

Excellent in all fronts, one of the most authentic sushi spots I’ve been at in the US. Simplistic, super clean, attentive and respectful service. The food was excellent, very well prepared and with fresh fish and seafood; they make sure to feature the food and let it do all the talking. I don’t have enough compliments for this establishment, top notch on all fronts. I’m coming here every time I’m in LA, absolutely!!
